Our Dr. Oetker cake glaze is celebrating its 75th anniversary. It has been available in
the range since 1950 and refines fruit cakes with appetizing gloss or fruity fillings. 

All beginnings were colorful

In the 1950s, Dr. Oetker cake glaze was available in three colors: yellow, red and green - to match the bright colors of delicious fruit tarts. Later, clear cake glaze was also launched on the market, which was and is even more versatile.

Cake glaze: Knowledge and recipes from the Dr. Oetker test kitchen

What is cake glaze anyway? It is an immediately gelling, firm icing made from starch
and the gelling agent carrageenan and can be used for cakes and tarts of all kinds. Cake glaze therefore contains no gelatine. One packet is prepared with 250 milliliters of liquid, does not form lumps and can be used immediately.

Jens Behrend, master confectioner and baking project manager in the Dr. Oetker test
kitchen, has a tip for a special cake glaze:

For a fruity or delicate taste, simply use fruit juices such as apple or orange juice or the juice from canned fruit as well as wine or sparkling wine as the liquid for preparation. What many people don't know: Cake glaze can be used to easily thicken fruity fillings. I recommend these two cake recipes: Schwarzwälder Kirschtorte or Rhabarber Torte.

A smile thanks to smiling fruit tarts 

In the 1970s, Dr. Oetker launched a fruit tart promotion to coincide with the peak season:
laughing fruit tarts. Together with vanilla sugar, cream stiffener and Dr. Oetker cake bases, our cake icings formed a perfect set for the fruity cakes. From the many colors at the beginning, there is still the already sweetened cake glaze fix with fine strawberry flavor and unsweetened cake glaze in clear, red or with fine strawberry flavor.

From simple to cheerful

Not only the colors of the product, but also its packaging have changed over the last 75
years. Initially with a simple diamond-shaped design, from the 1960s onwards the packaging featured a cake that made people want to bake it. This is how, for example, the laughing strawberry cake from our commercial at the time came about. Then as now: “Baking yourself means giving love!”
